Byington Vineyard & Winery the gem of the Santa Cruz Mountains, located near San Francisco, Our vineyard sits on 95 mountainous acres surrounded by redwood forests with a view to the Monterey Bay. Byington produces award-winning Pinot Noir, Cabernet Sauvignon, and Chardonnay wines and other exciting varietals that highlight the diversity of Northern California.
We have two tasting rooms: one located at the winery and the other located on 366 Main Street in Los Altos, California. We have tastings, wine by the glass, bottle sales and food items at both locations.

Mouthfeel & taste
Mouthfeel refers to the physical sensations in the mouth caused by food or drink, as distinct from taste. It is a fundamental sensory attribute which, along with taste and smell, determines the overall flavor of a food item.(Wikipedia)
Byington Winery grows, makes and bottles premium wines from top wine growing regions of the World. Our wines are handcrafted from finely selected grapes, giving the wines a perfect mouthfeel, taste and color.
For best enjoyment, please aerate our wines well in advance of drinking, or use a decanter for serving.
We use sustainable and organic growing principles. Our wines are produced by old-fashioned methods without the use of chemicals to promote color or flavor. We use SO2 as the only preservative and chemical in the wine making and bottling process.
Our grapes are handpicked and sorted on the vines. Our winemaker and his team, make all the wines by hand following old world methods.
Our winery is solar powered, covering approximately 100% of our needs.
Uniqueness @ high elevation
All our estate grapes are all grown at elevation of 2000 feet or above, increasing the wines aging potential, and flavor profile.
Some scientists have noticed increased concentrations of the antioxidant, polyphenol potentially providing additional health benefits of the wine.
California wines have many different flavor profiles for the various grape varietals. Our Santa Cruz Mountains estate is located in a premium AVA for growing Cabernet Sauvignon and Pinot Noir.
Our Sonoma/Alexander Valley estate is located in a high elevation, reserve wine AVA called Pine Mountain - Cloverdale Peak. Our vineyard there was first established in 1855.
Our wines are generally aged in premium oak barrels
We use premium oak barrels from the USA, France, Hungary etc. Our reserve white wines are barrel fermented and stays in barrel for up to a year. Our red wines are aged in barrels for up to 30 month.
We do also produce stainless steel fermented wine, such as some of our Chardonnays to produce lighter and crisper flavor.
Our Red Wines are Unfiltered
In our experience mechanical filtering can remove desired flavors in a wine, so we only use it for white wines.
Why filter wine? Typically, wines are filtered for esthetic reasons to make them look crystal clear.
For red wines we filter by using gravity only, thereby preserving essential flavors. Gravity filtering is a normal part of the barrel aging process.
We do not use mechanical filtering, which typically is described by the term unfiltered.
