This Sparkling Rosé is a Byington “triple” Pinot Noir made entirely from our Estate-grown Pinot. It starts with our early-harvested Pinot grapes to create the rosé. We then add Pinot port, which includes our Pinot-based brandy for the dosage, adding a whisper of sweetness to this dry sparkling wine. Crafted by Method Champenoise, and given extended time on the lees, a flurry of tiny bubbles carry flavors of cherry, strawberry, and peach into a creamy finish.
